KORU®, Carrot & Ginger Juice

Prep Time: 10 minutes

Servings: Yields 400 ml/2 servings

Add other fruits and/or vegetables....the possibilities are endless!!

Ingredients

3 KORU® Apples, sliced to fit in juicer
2 large carrots, cut to fit in juicer
Thimble size piece of raw ginger

Method

  1. Wash all ingredients.
  2. Using a juicer, juice all ingredients according to machine directions.
  3. Serve immediately in glasses or store in refrigerator in a covered glass container up to 72 hours.

 

KORU® and Pear Smoothie

Preparation time: 10 minutes
Servings: 2-4 (Yields 24 oz/750 ml)

"There is so much 'healthy' going on in this smoothie! It is a delicious drink on a hot day, or as an afternoon (or after school) snack for the kids!"

Substitute other fruits or add spices such as grated ginger or ground cinnamon.

Ingredients

1 KORU® Apple, cored and roughly diced
1 pear, cored and roughly diced
1 cup coconut water
1 cup ice cubes
1 handful mint leaves, roughly chopped
1 handful baby kale, roughly chopped and any tough stems removed
2 tablespoons sliced almonds

Method

  1. Place all ingredients in a blender, and blend until smooth.
  2. Pour into glasses and garnish with an apple slice.
  3. Enjoy!

KORU® Salsa

Prepared in: 10 minutes

Servings: Makes 4 cups

Adust to your desired 'heat level' by deleting or adding more jalapeno peppers!

Ingredients

1 KORU® Apple, diced (approximately 2 cups/400 ml)

½ red onion, diced

2 small bell peppers (red-orange-green or yellow-your choice – it’s nice to have a mixture to make it colorful)

½-1 jalapeno pepper, depending on desired hotness

1 large or 2 small cloves garlic, minced

1 hand full of cilantro, roughly chopped

1 small lime, juiced

Method

  1. In a small bowl, mix all ingredients.
  2. Serve with corn chips or tacos!

KORU® and Salted Caramel

Cooks in: 10 minutes

Servings: Makes 1 1/4 cups (310 mils)

After dipping the KORU® apple or KORU® apple slices in Salted Caramel sauce, dip in assorted 'toppings' such as graham cracker bits, coconut flakes, nuts or chocolate bits!

Ingredients

1/3 cup (75 grams) butter

¼ cup (50 grams) brown sugar

¼ cup (50 grams) white sugar

1/8 cup plus 1 tablespoon (50 grams) golden syrup

4 ounces (125 mils) heavy cream

1 teaspoon sea salt (not table salt)

Method

  • In a small saucepan over medium-high heat, melt together butter, sugars and syrup.
  • Simmer and stir for about 3 minutes.
  • Add cream and sea salt (mixture will bubble a bit, but that’s OK); cook and stir an additional 1-2 minutes until thickened.

KORU® Vegetable Salad

Preparation time: 15 minutes

Servings: 8-10 side servings; 4-6 main dish servings

Substitute or add other vegetables such as radishes, kohlrabi or sprouts, as well as alternate seeds or nuts.

Ingredients

1 KORU® Apple, cored and julienned or grated

1 cup raw beets, peeled and coarsely grated

1 cup carrots, peeled and coarsely grated

1 cup finely shredded red cabbage

1 cup shredded brussel sprouts

1 cup shredded kale

¼ cup sliced almonds

¼ cup pumpkin seeds

¼ cup sunflower seeds

¼ cup fresh mint leaves, roughly chopped

 

Salad Dressing:

¼ cup EVOO

2 Tablespoons apple cider vinegar

1 Tablespoon honey

Salt and pepper to taste

Method

  1. Whisk salad dressing ingredients together in a small bowl and set aside.
  2. Layer KORU® Apple and all vegetables in a medium size salad bowl or on a platter.
  3. Sprinkle seeds, almonds and mint over the top.
  4. When ready to serve, pour salad dressing over the top and toss.
