Kale & KORU® Salad

Add bacon bits, or for a complete meal add cooked chicken, salmon or prawns!

Ingredients

Salad

8 cups (120 gm) baby kale (or spinach)

2 medium KORU® Apples, cored and thinly sliced

1/2 cup (50 gm) dried cranberries

1/2 cup cucumber, thinly sliced

1 small red onion, thinly sliced


Salad Dressing

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or maple syrup)

1 teaspoon Dijon mustard

Sea salt & ground pepper to taste

 

Topping

1/2 cup slivered almonds, pecan or walnut halves, toasted

4 ounces (100 gm) feta cheese, crumbled

Method

  1. Toss salad ingredients together in a large salad bowl.
  2. For the dressing, place all ingredients in a jar and shake to mix well.
  3. Drizzle salad dressing over salad and toss lightly.
  4. Sprinkle with almonds and feta cheese over the top.
  5. Salad should be served shortly after adding dressing.
