KORU® Apple & Fennel Salad

Ingredients
1 KORU® Apple, cored and thinly sliced
1 Medium fennel bulb, quartered and thinly sliced (Best to do with a mandoline)
6 cups (about 100 grams/6 ounces) baby spinach or mesculin
Dressing
3 tablespoons extra virgin olive oil
1 tablespoon cider vinegar
1 teaspoon dijon mustard
1/2 teaspoon honey
Sea salt and fresh ground pepper to taste
Topping
A handful of fennel fronds
1/3 cup (50 grams) crumbled blue cheese
Method
- In a small mixing bowl, whisk together salad dressing ingredients.
- Gently toss sliced apples and fennel with the salad dressing mixture.
- Place greens in a salad bowl or on a serving platter.
- Scatter apple and fennel mixture over the salad greens.
- Serve sprinkled with crumbled blue cheese and fennel fronds.
